Kernel Mode-setting
Kernel mode-setting (KMS) means that the kernel is responsible for setting up and changing the display mode: resolution, frequencies and color depth. Kernel modesetting and memory management describes some aspects of KMS along with Fedora specific information. KMS as a Linux feature was introduced in 2.6.29.
KMS in Nouveau is supported and actually the only way to go. It automatically offers nouveaufb, an integrated (into the DRM driver) framebuffer driver for the virtual console. Most notably this gives you a high resolution text console. More information about framebuffer console is in Documentation/fb/fbcon.txt. KMS and nouveaufb are inseparable.
Your boot time virtual console display driver affects the compatibility of nouveaufb:
VGA text mode: works
vesafb: works (hand-over) (more reliable for >= 2.6.35)
efifb: works (hand-over) (fixed in 2.6.33, commit; more reliable for >= 2.6.35)
offb: might work (hand-over) after fixes in offb (merged in 2.6.33), but still some problems
vga16fb: works (hand-over) (>= 2.6.35)
uvesafb: does not work
nvidiafb: does not work (does not make sense, either)
rivafb: does not work (ditto)
anything else: most likely does not work
nvidia, the proprietary driver: does not work (included in the list of incompatible kernel modules, just for completeness)
1. Kernel framebuffer driver hand-over
Here hand-over means that when nouveaufb takes over the card on load, the previous fb driver deactivates automatically: the device ownership is handed over. Without hand-over, there would be several drivers driving the same card, and Nouveau does not support that.
Another aspect of hand-over is selecting the driver for the framebuffer consoles. When there is only one fb driver, this works automatically. When there are several, the first fb driver (fb0) is used by default. In a hand-over case with CONFIG_VT_HW_CONSOLE_BINDING=n the first fb driver is not completely unloaded, and nouveaufb will get to be fb1. This will result in a non-working console display, because the consoles are bound to fb0.
For hand-over to work properly, your kernel configuration needs to have CONFIG_VT_HW_CONSOLE_BINDING=y. An alternative to that is passing fbcon=map:1 on the kernel command line (does this really work?).
2. Activating KMS
First, make sure your kernel configuration has CONFIG_FRAMEBUFFER_CONSOLE enabled. Most sane configurations have it built into the kernel, but you can have it as a module (fbcon.ko), too. In that case make sure this module is loaded before or along with nouveau.ko. Otherwise your virtual console appears frozen.
With recent nouveau, KMS is on by default, unless you disable it with modeset=0 option.
3. Am I running KMS?
If you cannot tell from the screen right away (you are not sure what a framebuffer mode looks like, or you had another fb driver active), look into /proc/fb. If it mentions nouveaufb, you are running KMS.
The best hint is the kernel log. When you use KMS, you get something like this (NV28 card):

Especially notice the line fb0: nouveaufb frame buffer device.
If you do not use KMS, you will only get very little, e.g. this log from an NV98 system:

The Nouveau DDX also mentions in the X server log if KMS is in use. For instance, in /var/log/Xorg.0.log you may find a line:

If you are not using KMS, you should update all the Nouveau components, because you are using an outdated version. User mode setting, i.e. non-KMS, was completely removed.
4. Deactivating KMS and unloading Nouveau
The framebuffer console reserves nouveaufb and therefore you cannot directly unload the Nouveau kernel module. You have to unbind nouveaufb first. When you unbind nouveaufb, the earlier fb driver (not vesafb) or the VGA console driver will take over. Your kernel configuration needs to have CONFIG_VT_HW_CONSOLE_BINDING enabled.
NOTE: For NV50 class hardware and above, the VGA text mode cannot be restored, you will be without a working virtual console until you load a new framebuffer driver! For older hardware the VGA text mode console should be restored fine. If you want to try to restore the VGA text mode yourself, the command vbetool post might be able to do that. Please, read the vbetool manual, before attempting it.
Here is an example script to unload Nouveau KMS:

The echo line unbinds nouveaufb from the framebuffer console driver (fbcon). Usually it is vtcon1 as in this example, but it may also be another vtcon*. See /sys/class/vtconsole/vtcon*/name which one of them is a "frame buffer device".
The console font trick may be needed with the VGA text mode to restore proper console state (to keep the active line visible), and depends on your distribution.
5. Forcing Modes
A mode can be forced on the kernel command line. Unfortunately, the command line option video is poorly documented in the DRM case. Bit and pieces on how to use it can be found in
